Fresh Peach Pie

If you haven't noticed I usually only put recipes on here that I LOVE! Sometimes they are just great tasting and others are just easy to make and are pretty good. This is one that I LOVE. Pie Crust: 3 c. flour 1 c. Crisco 1 tsp. baking powder 1 tsp. salt Mix together with your hands until it is mixed evenly. Take 1/2 c. of hot tap water and put in 1 tbsp. of vinegar. Mix this with the other stuff and roll out. Makes 4 crusts, or 2 pies if you have a top crust and bottom. Peach Pie: 3 cups sliced peaches 1 cup sugar 1-3 oz. pkg. peach jell-o 1/3 c. cold water 2 tbsp. cornstarch 1 cup 7-up Heat 7-up & sugar to dissolve sugar. Mix cornstarch and water and add to 7-up mixture. Cook until slightly thick. Add dry Jell-o, chill, mix with fruit or berries. Pour into baked pie shell. Top with ice cream or cool whip. *I usually double the recipe and it makes about 3 pies. Homemade fresh Salsa (very yummy!)

8 Roma Tomatoes (or use regular, but the salsa won't be as hot) I actually put about 20 reg. tomatoes from the garden. 1 jalapeno Pepper 2 Serrano Chili Peppers 1 med. onion (or 1/2 if you don't like that much onion) Chop all the above ingredients. Then Add: 1 sm. can green chilies 1/4 tsp. cumin 1/4 tsp. cocoa 1/4 tsp. chili powder 1 tsp. dried cilantro (fresh will also work) 1 tsp. crushed red pepper 1/2 tsp. Jan's crazy salt mix (get this at Albertson's) 1/2 tsp. salt 1/2 tsp. lemon juice Will last up to one week in the fridge. Sooooo Yummmy!

Sweet & Sour

I made this yesterday with some left over pork. It is really simple and only took about 20 minutes to prepare. Cut and cook boneless chicken or pork. If using meatballs, roll raw hamburger in cornstarch and cook in 1/4 in. of oil. Cut up green peppers, onions and mushrooms, carrots, celery, cauliflower, bean sprouts, water chestnuts (anything you have handy). Saute' vegetables. Combine 2 tablespoons corn starch with 1/2 cup sugar. Add 1/2 cup pineapple juice and 1/2 cup vinegar. (I just used a large can of pineapples and the juice from that, then added the pineapples with the veggies). Cook until boiling, add a pinch of ginger if you have it. Combine with vegetables and meat. Serve over rice.

Tater Tot Casserole

1 pkg. tater tots, or 1 pkg shredded hash browns 2 cans cream of mushroom soup 1 lb. ground beef a little milk grated cheese Fry ground beef with onion, salt and pepper. Drain fat. cover 9X13 in. pan with tater tots. Put ground beef over tater tots. Pour cream of mushroom soup, mixed with some milk over the meat. Sprinkle cheese on top. Add a few tots for topping (crumbled). Cook 35-40 min. at 350.

Chicken Divine

4 chicken breasts 1 cup milk Swiss cheese 1/2 package stove top dressing 1 can cream of mushroom soup Place chicken in buttered casserole. Place slices of cheese over chicken. Combine soup and milk. Pour over chicken. Pour dry stove top dressing on top. Bake 1 hour at 350 degrees uncovered.

South of the border wraps

1 can kidney beans, drained 1/4 c. salsa 1 can whole kernal corn, drained May add mean, onion, etc. 1/2 cup grated cheddar cheese flour tortillas Mix everything but tortillas and cheese. Spread on tortilla, sprikle with cheese. Roll up and microwave until hot about 1 min.

Navajo Tacos

For the Shell: Make this mix and store in a container with lid: (I use the ice cream buckets) 7 cups flour 8 tsp. baking powder 1/4 cup shortening 4 tblsp. sugar 4 tsp. salt Mix together until shortening is blended and you see no lumps. Now take 2 cups of the above mix and 2/3 cup of water, mix well with fork. Dough should not be sticky. Let rest 5 or 10 min. Take small amount of dough and roll out on bread board which you have rubbed a layer of cooking oil on. Cook in hot grease, turn and cook on other side. Top with: 1 lb. hamburger cooked and drained, with 1 can chili and mash it (or 1 can refried beans) Cheese, tomato, lettuce, salsa.

Homemade Bisquick

10 cups flour 1 Tblsp cream of tarter 1/4 cup sugar just under 1/2 cup baking powder 1 1/2 Tblsp salt 2 cups shortening Mix together with mix master or I just used a blender and it fits pretty good in one of those 5 gallon ice cream buckets. To make pancakes add 1 cup milk and 1 egg with enough mix to make pancakes as thick as you like. (about 1 cup or less). For biscuits, add 1 cup milk to 3 cups mix. Roll into ball and smash onto cookie sheets and bake. About 350 for 8 min. Check for brown bottoms and not doughy. Tip: To make this healthier you could leave out the sugar and use half white, half whole wheat. I have also left out the cream of tarter and not noticed a difference. I haven't ever left out the sugar so that is up to you, but I have seen healthy recipes similar with no sugar.

Salsa

Salsa 1 lug tomatoes (about 50) 2 large onions 6 stalks celery-individual 2 green peppers 2 10 oz. cans jalepenos-chopped but don't drain. 1 tsp. salt 1/2 tsp. pepper 1/2 tsp. garlic salt Scald tomatoes-peel. Cut into 8-10 pieces. Place in large pan. Add other chopped things and spices. Mix well. Cook until boiling. Use full heat. When boiling turn heat down to med-low. Cook 5 min. Stir often. If you want thick sauce. Mix 1/2 c. flour, 2/3 c. water stir (or shake in jar) until smooth. Add to sauce and bring back to boil. Put in pint jars and seal 10 min bath. This was a little spicy, so I might suggest 1/2 jalepenos.

Whole Wheat Bread

Whole Wheat Bread I got this bread recipe from Laurel Mills (used to be fulkerson) my friend I grew up in Gunnison with. I have made it several times since she gave it to me and love it. I borrowed my mother-in-law's wheat grinder and made it from scratch which doesn't take any time at all. Also, I like the all wheat, but I do a half wheat, half white flour for Randy (picky). 1 pkg. yeast in 1/4 c. water 1 T. salt 1/3 c. honey 6 c. whole wheat flour 2 1/3 c. hot water 1/3 c. oil 1 T. molasses Dissolve yeast 5 min. Add in hot water and 3 c. flour. Mix and add salt, oil, molasses and honey. Add the rest of the flour. Use mixer till it's too thick, and then knead with oiled hands till soft. Let rise double. Put in 2 loaf pans and rise. Bake 350 for 45 min.

Spinach Dip

Spinach Dip 1 cup (16 oz.) Sour cream 1 cup Mayonnaise 1 packet of vegetable recipe mix (Knorr mix) 1 10 ounce package of frozen chopped spinach (thawed and drained) 1 (8 oz.) can water chestnuts, drained & chopped 3 green onions, chopped (optional) mix well, refrigerate for at least 2 hours. Serve with veggies, wheat thins, favorite cracker, or french bread.

Taco Mac Salad

Taco Mac Salad 1 box (8oz.) tri-color spiral macaroni 1 lb. taco seasond ground beef 1/2 cup green peppers, chopped 1/2 cup onions, chopped 1 cup cheese-cheddar, shredded 1 carton cherry tomatoes 1/2 head lettuce, shredded saltpepper 1/2 cup french dressing few hand fulls of crunched nacho Doritos Cook macaroni as directed. Drain. Rinse with cold water. Drain again. In a large bowl mix macaroni, green pepper, onion, cheese, tomatoes, lettuce, & seasonings. Chill. Just before serving, stir in warm seasoned ground beef, french dressing and chips. Toss lightly. Good served with sliced fruit of your choice and vanilla yogurt.

Mexican Casserole

Mexican Casserole 1 lb. hamburger 1 lb. can tomatoes 8 oz. tomato sauce 6 oz. can tomato paste 15 oz. can red kidney beans 12 oz. can whole kernal corn 1 small can sliced olives 1 pkg. chile seasoning Tortilla Chips 1 1/2 cups shredded cheese Brown hamburger. Add everything but chips & cheese. Simmer 10 min. In pan layer chips, hamburger then top with cheese.Cook 15 to 20 min. 350

Homemade Noodle Soup

Homemade Noodle Soup In Big Pot:Start lefft over gravy and fill up 2/3 with water. (No gravy just add chicken bouillon to water) Add 1/2 onion-chopped, 2 celery stalk-chopped, 1 tsp. parley, 1 Bay leaf. Chicken bouillon to taste Simmer this while you make the noodles. Noodles: 2 eggs 2 -(1/2) egg shells of milk 2 tsp. salt 2 tsp. Baking powder Add flour till not sticky Roll out with more flour and cut about 1/4 inch lengths Add noodles to boiling water stir them so they don't stick together. Add some left over turkey or chicken. Cook 15-25 min till noodles are no longer doughy. (Take out bay leaf)

Pasta Salad

Pasta Salad 7 oz. cooked pasta (Mac, shells, etc.) 1/2 cup diced carrots 1/2 cup diced celery 1/3 cup diced red onion (or green onion) 1 cup frozen peas 3 oz. sliced olives (drained) 3/4 cup house italian dressing tomatoes, cut up, optional 1/2 cup diced cheese , optional mushrooms if you like Salt&Pepper to taste, may add basil, thyme also

Potato Salad

Potato Salad Boil:3-4 potatoes 2-3 eggs Slice and peal eggs & potatoes then add; 2/3 c. miracle whip, 2 tblsp. mustard (horseradish kind is good), 1/2 tsp. season all spice, or just salt. 1/2 c. onion chopped, 1/2 c. thinly sliced celery 1/4 c. relish (zucchini if you have it.) 1/2 c. finely shredded carrot. Cover and chill at least 4 hours.

Sloppy Joes

Sloppy Joes 1 lb. hamburger with salt&pepper 1 chopped onion 1 pkg. sloppy Joe mix 1 can small tomato sauce 1 can stewed tomatoes 1/4 cup Brown sugar Brown hamburger&onion with salt & pepper to taste. Drain off grease. Add mix, tomato sauce, tomatoes, & Brown sugar. Simmer 40 min.

Zucchini Relish

3 C. Zucchini (About 3 reg size or 2 large) 4 Cups Cucumbers (5-6 small or 4 Reg. ) 1 Cup Green Bell Peppers (2 Big) ½ Cup Red Bell Peppers (1 Big) 3 cups Onions (3 whole) 3 Cups Celery (1 Bush) 1 Carrot Finely chop all vegetables. Sprinkle with ¼ cup salt. Cover with cold water and let stand 4 hours. Drain, and squeeze out as much liquid as you can. 3 ½ Cups Sugar 2 Cups Vinegar 1 Tablespoon Celery Seed 1 Tablespoon Mustard Seed Bring to boil. Add Vegetables and simmer 10 min. Pack in hot jars, seal and hot water bath 10 min. Makes about 7 pints.

Chicken with Peach Barbecue Sauce

Chicken with Peach Barbecue Sauce 2 Tbsp. flour 2 Tbsp. Worcestershire 2 Tbsp. mustard 1 c. catsup 1 tsp. chicken bouillon 1 tsp. salt 1 tsp. pepper 1/4 c. chopped onion 1/4 c. green pepper (optional) 1/4 c. zucchini (optional) Peach and juice from one large can Combine and bring to boil. Pour over chicken that has been partly cooked and has skin removed. Cover and bake at 350 until chicken is done. Last 5 minutes put in peaches. Serve over rice. (I just use boneless skinless chicken breasts.)

Chuck Wagon

Chuck Wagon 1 French bread 1 lb. browned hamburger 1 can olives, sliced 1 can cream of mushroom soup 1 c. celery 1 to 2 c. Cheddar cheese Directions: Cut french bread along top long ways. Pull out middle of bread and save. Mix hamburger, olives, soup, celery, 1/2 of cheese, and bread middles in a bowl. Place mixture in hollowed French bread. Top with remaining cheese and put French bread top on. Place on a cookie sheet. Bake at 350 for 20 to 25 minutes. Cut and serve. (I love these left overs because they are not as crispy but still great tasting)

Crock pot chicken stroganoff

Crock pot chicken stroganoff 4 chicken breasts, cubed 1/2 . margarine 1 pkg. dry Italian dressing mix 1 can cream of chicken soup 8 oz. cream cheese Put first 3 ingredients in crock pot. Cook on low 6 hours. Turn to High and add soup and cream cheese. Cook 30 minutes. Add water to make gravy consistency. Serve over noodles or rice.

Barbecue Chicken

Barbecue Chicken Marinade: 4 lb. boneless chicken 1 c. soy sauce 1 c. oil 2 c. sprite 1/4 tsp. garlic powder 1/2 tsp. horseradish Mix marinade and chicken and refrigerate for 24-48 hours. Grill on the BBQ.
Easy Apple Crisp with honey INGREDIENTS 2-1/4 cups peeled, cored and sliced apples (3 1/2 small) 1 teaspoon lemon juice 1 tablespoon water 1/4 cup honey 1/2 teaspoon ground cinnamon 1/4 cup and 2 tablespoons brown sugar 1/4 cup and 2 tablespoons all-purpose flour 1/4 cup and 2 tablespoons rolled oats 2 tablespoons butter DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium casserole dish.Evenly spread the apple slices in the prepared dish. In a small bowl, mix the lemon juice and water, and pour over the apples. Drizzle apples with honey, and sprinkle with cinnamon.In a bowl, mix the brown sugar, flour, oats, and butter until the mixture resembles coarse crumbs. Sprinkle over the apples.Bake 30-35 minutes in the preheated oven, until apples are tender and topping is lightly browned.

Au Gratin Potatoes

Au Gratin Potatoes INGREDIENTS 4 russet potatoes, sliced into 1/4 inch slices 1/2 onion, sliced into rings salt and pepper to taste 3 tablespoons butter 3 tablespoons all-purpose flour 1/2 teaspoon salt 2 cups milk 1 1/2 cups shredded Cheddar cheese DIRECTIONS Preheat oven to 400 degrees F (200 degrees C). Butter a 2 quart casserole dish.Layer 1/2 of the potatoes into bottom of the prepared casserole dish. Top with the onion slices, and add the remaining potatoes. Season with salt and pepper to taste.In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened. Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds. Pour cheese over the potatoes, and cover the dish with aluminum foil.Bake 1 1/2 hours in the preheated oven.

Squash Casserole

It was my turn for Sunday dinner today. I cooked pork chops which I don't do, ever, really it is usually beef, chicken, maybe a ham. So I actually looked up a recipe off the internet to cook those. It was okay, but I wouldn't say just great. I also had Zatarans rice and red beans, this squash casserole I am going to give you, fruit (watermelon, plums, mangos), green salad. Then we made homemade ice cream. Cheescake icecream with raspberries and bananas (very yummy! Anyone hungry yet?) So this casserole was very good and everyone had seconds. Try it if you have some extra squash hanging around. Whole Wheat Pancakes

This is pretty good. Randy got it from a guy in our ward. 1 apple-blended 2 large eggs or 1 extra large 1 1/2 tsp. lite salt 3 tblspoons honey 1 to 3 cups yogurt (depending on thickness of pancake you like) 3 cups fresh ground wheat (Makes 4 1/4 cups flour) 1 1/2 to 2 tsp. baking soda 1 tbsp. butter Mix it together and cook your pancakes. This makes a pretty large batch, so you may want to cut in 1/2 or 1/3 for a small amount.
