Chicken Salad Sandwich

4 cups seasoned and grilled chicken breasts, cubed- 2 hard boiled eggs, chopped- 2 cups seedless grapes - green or purple- 1 15 oz. can pineapple chunks, well drained- 1/4 cup chopped green onion- 1 T. mustard mixed with 1 cup salad dressing or mayonnaise- 1 5 oz. can Chowmein noodles- lettuce & tomato optional ingredients:- 1 11 oz. can mandarin oranges- 1/2 cup green pepper, chopped- 1/2 cup sliced olives- 3/4 cup celery, chopped Mix all ingredients except Chowmein noodles, chill in refrigerator. Just before serving, top with noodles. Serve on bakery rolls, with lettuce and tomato.

Pin Wheels

2-8oz. pkg. cream cheese, softened 1-1oz. pkg ranch dressing mix 2 green onions 4 (12 in.) flour tortilla 1/2 cup red bell pepper, diced 1/2 cup diced celery 1-2 oz. can sliced black olives 1/2 cup shredded cheddar cheese 3/4 cup chopped ham slices Directions: In a med. bowl combine cream cheese, ranch dressing mix, and green onions. Spread this mixture on each tortilla. Sprinkle red pepper, celery, black olives, ham, and cheese over the cream cheese mixture. Roll up the tortillas, then wrap them tightly in aluminum foil. Chill 2 hours or overnight. Cut off ends of the rolls, and slice the chilled rolls into 1 inch slices and serve.

Green Jell-O Salad

The long way: (grandma's recipe) 1-6 oz pkg. Green Lime Jell-O 1 can crushed pineapple 8 oz. cream cheese 1 cool whip-small reg. size Prepare Jell-O according to packaged instructions, when almost set add 1 can of drained crushed pineapple. After Jell-O has completely set up, using electric mixer add 1 softened pkg of cream cheese and 1 tub of coo whip. Mix well and serve. The short way: Mix together: 1-8oz. cool whip 1-24 oz. cottage cheese Add one large can crushed pineapple drained well and 1-6oz. Lime Jell-O dry package. Stir all very well, chill, and serve.

Corn Cake Toppers

I saw this on another recipe blog and it is yummy! Chili: Browned ground turkey/beef, onions, beans, diced tomatoes, tomato sauce, Worcestershire sauce, chili powder and pepper in my crock pot. The cornbread pancakes: Jiffy cornbread mix (follow recipe), a little bit of sour cream, chopped green onions (optional) and drop spoonfuls onto a griddle. Pour chili over the pancakes with shredded cheese!

Steak Marinade

This is from my brother Jon 1 can beer (small) BBQ sauce Teriyaki sauce Steak sauce Horseradish sauce Garlic Mix and pour over meat. Marinade at least 24 hours for better steaks. Of course you don't have to use beer and it does cook off while grilling. It just makes the steak so tender. I have done it with other clear sodas (sprite). Also, I use more BBQ sauce than the other sauces and real garlic if you have it.

Chicken and Rice

1 can chicken gumbo or vegeable soup 1 can cream of mushroom soup 1 soup can water 2 c. rice (uncooked) 1/4 pkg. dry onion soup mix 1 chicken In a 9X13 inch pan stir all ingredients up and lay in 1 raw chicken, or equivalent (legs, thighs, breasts). Sprinkle rest of dry soup mix over chicken. Put on a loose foil lid (so it will brown). Bake at 400 for 1 hour 15 minutes or 325 for 2 hours.

Chicken Burritos

Chicken Mixture: 4 chicken breast, cooked and cubed 1 (7 oz) can tomatoes and jalapeno peppers 1/4 c. sour cream 1 tbsp. chili powder 1 tsp. salt 1 (16 oz) can refried beans 8 (8 in.) flour tortillas 1/2 lb. shredded monterey jack cheese Mix together all ingredients for chicken mixture in a bowl. Spread 1/8 of the beans over each tortilla. Spoon 1/8 of chicken mixture across center of each. Sprinkle each with cheese, roll up, and place side by side in a baking dish. Coverwith foil and bake 30 minutes at 425. Remove foil and sprinkle with cheese. Bake 5 minutes longer. Serve with lettuce, tomatoes, salsa, etc. for toppings.

Raspberry Jell-O

1 box raspberry Jell-O 1 box cranberry Jell-O 1 frozen package raspberries 1 pint sour cream 1 tub whipped cream Chopped almonds or walnuts Directions: Make Raspberry and Cranberry Jell-O mix together. Add a package of frozen raspberries. Let it set for 1-2 hours. Top with 1 pint of sour cream and 1 tub of whip cream (separate). Add chopped nuts if desired.

Cauliflower Piquant

This is a really good side dish for anything or potluck. 1 medium head cauliflower 1/2 c. mayonnaise 3/4 Tbsp. mustard 1/2 to 1 c. grated cheddar cheese dash of salt Wash cauliflower and cut off stalk and leaves. Put in round glass pie dish with just enough water to cover the bottom of the dish. Put saran wrap over the dish. Microwave on High for 7 minutes. Poke holes in top of saran with a fork. Microwave on high for another 7 minutes. Remove from microwave (it will be extremely hot!) Uncover a little of the saran and drain water from dish. Mix the rest of the ingredients together in a small bowl-if you like it cheesier use more cheddar than listed. Pour mixture onto the cauliflower. Microwave uncovered for 2 1/2 minutes on High. Remove from microwave. Cut into pieces and serve. Can also be increased by about 3 times and cut up the cauliflower before mixing it with the rest of the ingredients and serving it for larger meals.

Pumpkin Chocolate Chip Cookies

1 c. sugar 1 c. pumpkin 1/2 c. oil (or 1/2 c. applesauce) 1 egg Mix together. Sift and add to above: 2 c. flour (can use whole wheat) 1/2 tsp. salt 1 tsp. cinnamon (or 1 1/2 tsp. more flavor) 2 tsp. baking powder Dissolve and add to rest of ingredients: 1 tsp. soda 1 tsp. milk 1 tbsp. vanilla 1 c. chocolate chips 1/2 c. nuts (optional) Preheat oven to 375 degrees. Drop on lightly greased cookie sheet. Bake approx. 10-12 min. Note: Careful not to over cook. Cookies will be soft and moist.

No Bake Cookies

2Tbsp. butter 1/4 c. cocoa 1/2 c. sugar 1/4 c. milk dash salt 1 tsp. vanilla 1 tbsp. peanut butter 1 1/2 c. oatmeal Melt butter 30 sec. Stir in cocoa, sugar, milk, salt, vanilla, p.b., and oatmeal. Drop spoonfull on wax paper. Eat after cools. Makes 12 cookies.

Better than Sex Cake

Layer 1: 1 c. butter melted 2 c. flour 1/2 powdered sugar Mix & put in cookie sheet. Bake 350 for 15 min. Cool & crumble save 1/2 c. for later Put in 9X13 pan Layer 2: 1 c. powdered sugar 1 pkg. 8 oz. cream cheese 1/2-13 oz. cool whip Cream together & spread over crumbs. Layer 3: 1 small pkg. instant choc. pudding 1 small pkg. instant vanilla pudding 3 c. milk Mix together, pour over cheese. Top remaining cool whip & sprinkle with crumbs. Set in fridge overnight.

Kellogg's rice Krispies treat-Original

3 tbsp. margarine or butter 1 package regular marshmallows 6 cups. rice krispies Melt butter in large saucepan over low heat. Add marshmallows and stir until completely melted. Remove from heat. Add rice krispies. Stir until well coated Using buttered spatula or waxed paper, press mixture even into 9X13 pan coated with cooking spray. Cut into 2-inch squares when cool. Best is served the same day. Store no more than 2 days in air tight container.

Tomato Soup

1/2 Bushel tomatoes (about 130 average tomatoes) 1/2 stalk celery 1/2 c. flour 1/2 c. butter 2 green peppers 2 red peppers 4 onions salt & pepper to taste 1/2 c. or less of sugar Cook until thick (2-4 hours) Bottles about 14 quarts

White or Wheat Bread

This is one I got from Kay. Makes 6 loaves so unless I plan to freeze some I usually do half. 8 C. warm water 1 tbsp. yeast Sprinkle 1 cup sugar on yeast and stir until yeast starts working Add 2 tbsp. salt 3/4 C. Oil (I use Extra Virgin Olive Oil) Add flour until not sticky (approx. 20 cups-I use fresh ground wheat and white bread flour. Half & Half) Let rise double in size Knead down and put in greased bread pans. Let rise again. Bake 45 min @ 350 Makes 6 loaves

Pumpkin Bars

This is one I got from Alisha. Beat together: 2 cups pumpkin 1 cup oil 2 cups sugar 4 eggs Then add: 1 tsp. baking soda 1 tsp. baking powder 2 tsp. cinnamon 2 C. Flour 1 tsp. vanilla 1/2 tsp. salt Grease & Flour cookie sheet. Preheat Oven to 350. Mix above mixtures. Pour into cookie sheet and bake for 30 min. Let cool. Add icing. Icing 1-8oz. cream cheese 1/2 cube butter 1 tsp. vanilla 4 cups powder sugar Beat until smooth and add to pumpkin bars.
