Chicken Pot pie

I like this recipe better than the old one. 1 c. cubed cooked chicken (I use a large can) 1 c. frozen mixed vegetables 1 can cream of potato soup 1/8 tsp. pepper 3/4 cup milk, divided 1 egg 1 c. Bisquick baking mix Preheat oven to 400. In a 9 inch pie plate mix chicken, vegetables, soup, pepper, and 1/4 cup milk. Mix remaining milk, egg, and baking mix. Pour over chicken mixture. Bake 40 minutes or until golden. Serves 4. Tip: You could leave out the egg if you want it more like biscuit texture on top.

Toastados

I got this from my mother-in-law! This is what I made this last Sunday and thought the recipe was already on here. Some people might call this Navajo Tacos, I have never cared enough to look up the difference between Toastados and Navajo Tacos. For the Shell: Make this mix and store in container with lid: 7 cups flour 8 tsp. baking powder 4 Tbsp. Sugar 4 tsp. salt 1/4 cup shortening Mix together until shortening is blended and you see no lumps. Now take 2 cups of ablove mix and 2/3 cup of water, mix well with fork. Dough should not be sticky. Let rest 5-10 min. Take small amount of dough and roll out on bread board which you have rubbed a layer of cooking oil on. (I just use my hands and mash it out) Cook in hot grease, turn cook other side. Top with 1 lb. hamburger cooked and drained, add 1 can chili (I used chili and mashed with potato masher) or refried beans if you like. Top with cheese, tomato, lettuce, salsa.

Smarter Fettuccine Alfredo

Ingredients: 1/2 lb. fettuccine, uncooked 1-1/4 cups. fat-free reduced-sodium chicken broth 4 tsp. flour 1/3 cup. Light Cream Cheese Spread 3 Tbsp. Grated Parmesan Cheese, divided 1/4 tsp. ground nutmeg 1/8 tsp. pepper 2 Tbsp. chopped fresh parsley Directions: COOK pasta as directed on package. MEANWHILE, mix broth and flour in medium saucepan with wire whisk. Add cream cheese spread, 2 Tbsp. of the Parmesan cheese, the nutmeg and pepper; cook 2 min. or until mixture comes to boil and thickens, stirring constantly. DRAIN pasta; place in large bowl. Add sauce; toss to coat. Sprinkle with remaining 1 Tbsp. Parmesan cheese and the parsley.

Fruit Pizza

This was the best! 1 pkg. pre-made sugar cookie 1 small cool whip 1 8 oz. cream cheese 1/2 cup sugar Fruit-Any kind you want, fresh or frozen My turn for dinner Sunday. So I made this in the morning. Refrigerated until we ate at 6pm, and the frozen fruit was perfect. On a pizza sheet spread the cookie dough. I had just pulled it out of the fridge and it was stiff (microwave 10 sec) Much easier to spread. Blend 1/2 c. sugar with the cream cheese. Add the whip cream blend some more. Spread this over the cookie dough. Then add the fruit. I bought 2 small bags of frozen berry blend (blueberries, strawberries, raspberries, blackberries). This was so good. Not too healthy, but very good. Also, because this was my day to allow sugar, Randy took all the leftovers to our neighbors so I wouldn't be tempted with leftovers.

Fruit Salad

Just cut up bite size pieces of 3 different kinds of fruit. Apples, bananas, grapes Mango, mandarin oranges, kiwi Whatever you want or have in the fridge or canned. Then take one yogurt any flavor and mix over your fruit! This tastes yummy and you don't have to worry about fruit turning brown. Refrigerate until ready to eat.

Slow Cooker Chicken-Lickin' Good Pork Chops

I just put this in the crockpot for tonights meal. Yep, I am using the crockpot alot lately. At least preparing dinner in the morning is working better for me than waiting until 4pm and saying, "What do I feel like making for dinner?" I am trying a lot of new recipes. This one is from Amy's MomAdvice One month of slow cooker meals . I am also getting alot from the internet, a lot of bloggers do a Slow cooker thursday meal. Tonight's dinner already smells good. I have never been that fond of pork chops, but I have had them a few times where they were good. So I am experimenting to find the good recipe I will like. I better find one, we are getting our pig from the butcher next week and I will have one big pig in our freezer to cook up in the next year. I cut the recipe in half. Slow Cooker 3 beans & Sausage

I am trying to organize my recipes. So hopefully I am going to add some more of my favorites to this blog. I love the crockpot! This is good and worth trying! 1 lb of smoked sausage, sliced (Kielbasa) in crockpot Add 1 cup of water to the slow cooker Add Kidney beans, rinsed and drained, to the sausage Add one can of rinsed and drained Great Northern Beans And one can of rinsed and drained black beans one onion, chopped up one can of tomato sauce 2/3 cup of chopped celery crumble up one chicken bouillon cube sprinkle some garlic powder One bay leaf, just remember to remove it before eating Black pepper 1/4 teaspoon of Oregano and Thyme, optional stir and set it on low for 4 to 5 hours Serve over rice. Tip: when it's ready if you find it a bit too watery for your taste, just take about a tablespoon of cornstarch, mix it with a little water to create a sort of paste and add it to the crockpot while stirring constantly, cook it on high for another 10 minutes or so or until it's t...

Crockpot Taco Soup

1 lb. beef 1 onion, chopped 1 16-oz. can chili beans, with liquid 1 15-oz. can kidney beans, with liquid 1 15-oz. can whole kernel corn, with liquid 1 8-oz. can tomato sauce 2 cups water 1 14.5-oz. cans peeled and diced tomatoes 1 4-oz. can diced green chile peppers (adjust to taste) 1 1.25-oz. package taco seasoning mix Garnishes such as corn chips, shredded cheese and sour cream In a medium pan, cook the beef until browned over medium heat. Drain and set aside.Place the beef, onion, chili beans, kidney beans, corn, tomato sauce, water, diced tomatoes, green chile peppers and taco seasoning mix in a slow cooker. Mix to blend. Cook on low for eight hours. Top bowls with corn chips, shredded Cheddar cheese and a dollop of sour cream. Makes 8 servings.

Pita Bread

I just saw this on MomAdvice and I am so trying this one. It looks healthy and yummy. These would make great mini-pizzas! Pita Bread (for the Bread Machine) 1 1/3 cup water 3 tablespoons olive oil 1 1/2 tablespoons sugar 1 teaspoon salt 3 cups bread flour 1 1/2 cups whole wheat flour 2 teaspoons yeast Put ingredients into the bread machine in order listed. Run the dough cycle on your machine. When the bread machine beeps, pull the dough out of the bread machine and divide the dough into ten pieces. Roll each piece into a six inch circle. Place these on a baking sheet (or your pizza stones) and let them rise for twenty minutes (I can fit about four rounds per pizza stone or three pitas per baking sheet). Bake at 500 degrees for three minutes. Using a spatula, flip the pitas and cook for another three to four minutes on the flip side. Food Tip-Brown Sugar

I haven't tried this yet, but I am going to. I just need to find a container for it. I always have issues with my brown sugar going hard before I use it all. I recently discovered that if you put it in a container and throw in a piece of bread it will never go hard again. Also, the bread never goes moldy. I have no idea why this would work and it would be interesting to find out. I know the old throw it in the microwave works just fine to soften your sugar, but I thought this little tip would be fun to try out and see if it really works.
