Cilantro-Lime Rice

Goes with the Sweet Pork Ingredients: 1 C. uncooked rice 1 tsp. butter or margerine 2 cloves garlic, mined 1 tsp. freshly squeezed lime juice 1 can 15 oz. chicken broth 1 cup water 1 Tbsp. freshly squeezed lime juice 2 tsp. sugar 3 tbsp. fresh chopped cilantro Directions: In a saucepan combine rice, butter, garlic, 1 tsp. lime, chicken broth and water. Bring to a boil. Cover and cook on low 15-20 min, until rice is tender. Remove from heat. In a small bowl combine lime juice, sugar and cilantro. Pour over hot cooked rice and mix in as you fluff the rice.

Sweet Pork

We had a RS night a while back all about food. This lady brought this recipe and we got to try it. It was really good. I am going to make it someday. Ingredients: 2 pound pork 2 cups apple juice dash garlic salt 1/4 c. water 1 can sliced green chilies 1 15 oz. can green enchilada sauce 1/2 c. brown sugar Directions: Put pork, 1/2-1 cup apple juice, water, and garlic salt in crock pot on high for about 3-4 hours or low for 6-8 (until it shreds easily, but don't let it get too dry). Remove pork from crock pot and drain any liquid left in the pot. Shred pork. In a food processor or blender, blend 1/2-1 cup apple juice, chilies, enchilada sauce and brown sugar. If it looks too thick, add more apple juice little by little. Put shredded pork and sauce in crockpot and cook on low for 2 hours. Roll in a big tortilla with cilantro-lime rice, black beans, cheese and lettuce.

For all those Cafe Rio fans here are some really good recipes I got from girls camp this year. Yes, we ate really well at girls camp. I was thinking of making this for dinner on Sunday this week. Dressing 1 buttermilk ranch dressing packet (made as per recipe) 2 tomatillos (tomato like vegetable with a husk around them) 1/2 bunch of cilantro 1 clove garlic juice of 1 lime 1 jalepeno (Use the seeds too if you like it spicy. You could substitue a few drops of green tobasco for the jalepeno.) Use a food processor to blend all the ingredients well. Refrigerate. Cafe Rio Rice 3 c. water 4 tsp. chicken bouillon 4 tsp. garlic-minced 1/2 bunch cilantro 1 can green chiles-or equivalent fresh 3/4 tsp. salt 1 T. butter 1/2 onion 3 c. rice Blend cilantro, green chiles and onion together in food processor.
