BBQ Beef Cups

I made this last night for dinner. It has been a while since I made it, but we all love it. Anything with BBQ sauce is good. You could probably do this with leftover shredded roast or chicken also. 1 lb. hamburger 1/2 cup BBQ Sauce (I don't measure, just throw in until meat is moist with sauce) 1/4 onion-diced 1 pkg. pillsbury buscuits-any flavor 1/4-1/2 cup shredded cheese Brown you hamburger with onion and add BBQ sauce. Spray a muffin tin and squish your buscuits until flat circles. Spoon two tablespoons of meat mixture in middle of buscuit while in muffin tin. (Just squish the meat down with the spoon and the buscuits will come up higher along the sides-Does that make sense???) Sprinkle cheese over top and bake in oven at 400 for about 10 minutes until buscuits are brown.

OR...Chickpea Burgers with Tahini Sauce. I tried this recipe here & below. Chickpea burgers 1 19-ounce can chickpeas, rinsed (I made my own from dried chickpeas cooked in the crockpot and used two cups then froze the rest) 4 scallions, trimmed and sliced 1 egg 2 tablespoons all-purpose flour 1 tablespoon chopped fresh oregano 1/2 teaspoon ground cumin 1/4 teaspoon salt 2 tablespoons extra-virgin olive oil 2 6 1/2-inch whole-wheat pitas, halved and warmed, if desired Tahini sauce 1/2 cup low-fat plain yogurt 2 tablespoons tahini (see Ingredient note) 1 tablespoon lemon juice 1/3 cup chopped flat-leaf parsley 1/4 teaspoon salt 1. To prepare burgers: Place chickpeas, scallions, egg, flour, oregano, cumin and 1/4 teaspoon salt in a food processor. Pulse, stopping once or twice to scrape down the sides, until a coarse mixture forms that holds together when pressed. (The mixture will be moist.) Form into 4 patties. My Favorites

I was thinking that now there are about 100 recipes on this site. I would say I enjoy 95% of them and yes there are some I didn't like, but can't remember which ones so I can delete them. I also make some of them often enough because I love them. I wanted to show some of those favorites here. If someone asked for a good recipe to try, I would recommend any of these. Awesome Banana Muffins

I made these this morning and they were a hit! 4 Large bananas, mashed 1/2 cup white sugar (original recipe calls for 1 cup, but I don’t like them too sweet) 1 slightly beaten egg 1/3 cup melted margarine or butter 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon salt 1 1/2 cups flour Mix the mashed banana, sugar, egg and margarine together. Set aside. In a separate bowl, mix together baking soda, baking powder, salt and flour. Mix wet and dry ingredients all together, being careful not to over-stir! Pour into greased muffin tins, and bake in 350 degrees oven for approximately 20 minutes. Enjoy! *These are much more flavourful the next day, and they freeze very nicely too! *Also, if you like walnuts, you can throw a handful of those in there as well for some added flavour and texture, or try adding chocolate chips, or better yet, BOTH!
