Cilantro-Lime Rice

Goes with the Sweet Pork Ingredients: 1 C. uncooked rice 1 tsp. butter or margerine 2 cloves garlic, mined 1 tsp. freshly squeezed lime juice 1 can 15 oz. chicken broth 1 cup water 1 Tbsp. freshly squeezed lime juice 2 tsp. sugar 3 tbsp. fresh chopped cilantro Directions: In a saucepan combine rice, butter, garlic, 1 tsp. lime, chicken broth and water. Bring to a boil. Cover and cook on low 15-20 min, until rice is tender. Remove from heat. In a small bowl combine lime juice, sugar and cilantro. Pour over hot cooked rice and mix in as you fluff the rice.

Sweet Pork

We had a RS night a while back all about food. This lady brought this recipe and we got to try it. It was really good. I am going to make it someday. Ingredients: 2 pound pork 2 cups apple juice dash garlic salt 1/4 c. water 1 can sliced green chilies 1 15 oz. can green enchilada sauce 1/2 c. brown sugar Directions: Put pork, 1/2-1 cup apple juice, water, and garlic salt in crock pot on high for about 3-4 hours or low for 6-8 (until it shreds easily, but don't let it get too dry). Remove pork from crock pot and drain any liquid left in the pot. Shred pork. In a food processor or blender, blend 1/2-1 cup apple juice, chilies, enchilada sauce and brown sugar. If it looks too thick, add more apple juice little by little. Put shredded pork and sauce in crockpot and cook on low for 2 hours. Roll in a big tortilla with cilantro-lime rice, black beans, cheese and lettuce.

Chicken Salad

3 C. diced chicken, cooked 1 8 oz. can pineapple, tidbits 1 C. celery, diced 1/2 C. chopped almonds 1 C. seeless grapes Dressing: 1 Tbsp. Olive Oil 1 Tbsp. Vinegar 1/2 C. Mayo 1 Tsp. Salt Mix the dressing ingredients and pour over salad. Chill

2 Step Chicken Broccoli Dinner

I saw this on Fabulessly frugal Website and saved it a while back. So this week I had some leftover cooked chicken and fresh broccoli and decided to try this one. Actually I made the casserole and put it in the fridge all ready to bake for Randy when he got home. Our kids are getting tired of frozed pizza and chicken nuggets for dinner (or maybe I am just getting tired of it) Ingredients 1 lb. fresh broccoli, cut into spears 1 1/2 c. cooked chicken, diced 1 can cream of broccoli soup 1/3 c. milk 1/2 c. cheddar cheese, shredded 2 tbsp. dry bread crumbs 1 tbsp. butter, melted In a shallow casserole dish, arrange broccoli spears on bottom. Top with cooked chicken. Combine soup and milk. Pour over chicken and then sprinkle cheese on top. Toast bread crumbs in a small frying pan with melted butter and then sprinkle over cheese. Bake at 425 for 25 min. Makes 6 servings. Serve with rice. For ease of making I would give it a 5 star and it had pretty good taste. Healthy would be alot...

Peanut Butter Bars

Ingredients: 3 C. Powdered Sugar 1 pkg graham crackers crushed 1 C. Peanut Butter 3/4 C. melted butter 1 pkg. chocolate chips Mix the first 4 ingredients and pat firmly in a 9x13 pan. Melt the choc. chips and spread them over the peanut butter. Chill and serve.

Chicken & Veggie Bake

This is another dinner idea from Cherie. Chicken Tenders-frozen Cream of Chicken soup Sliced fresh mushrooms Sliced zucchini Can diced tomatoes Pepper Italian seasonings Garlic powder In a 9X13 pan put the chicken topped with soup. Slice your mushrooms & zucchini and spread on top. Open can of tomatoes and pour evenly over the top. Sprinkle with favorite seasonings. Bake at 350 for about an hour. Serve with Rice. (I served with baked red potatoes & steamed broccoli. I also didn't have any zucchini and left it out. I would like to try with the zucchini next time.) My kids gobbled this up with only a little coaxing to get them to eat the mushrooms. Except for Courtney who kept eating only the mushrooms and nothing else and asking for more mushrooms.

Kielbasa & Eggs

This sounded kinda gross to me when Cherie told me about it, but she said it was good so I had to try it. 1 lb. Kielbasa (I usually buy turkey, but today we tried the Chicken) Rice-I made about 4 cups cooked Brown Rice Fried eggs Start the rice. Cut up the Kielbasa and fry it in a pan with seasonings. I used garlic powder, onion powder, pepper. While this is cooking, cook your eggs how you like them. (sunny side up). Pile your plate like this....Rice, kielbasa, egg on top. My kids loved this and ate it all up & I liked it too.

Taco Soup

This one I got from Cherie. It is really good and healthy. 1 lb. ground turkey burger 1 can kidney beans 1 can black beans 1 can sweet corn (not drained) 1 can water 1/2 cup quick cooking barley 1 can diced tomatoes (optional) 1 can tomato sauce salt & pepper taco seasonings Toppings: chips, sour cream, shredded cheese, fresh cilantro Brown turkey burger and add taco seasonings. While doing that drain beans and rinse and add to rest of ingredients (except barley) in a big pot. When turkey burger done add to pot. Cook until beans are tender about 20 min. Then add barley and cook another 10 min. (The water and barley aren't exact because I just threw them in & you may want the soup more juicy, but I liked mine thicker) After you put in serving bowls add sour cream and cheese and cilantro. (The cilantro is the best part of the recipe-I Loved It) Then use chips to dip instead of crumbling them. Mmmmm. A lot tastier as leftovers. Tip: I like mine a little spicier so I added sals...
