I am going to make pumpkin waffles for breakfast tomorrow. Chocolat & Peanut Butter Crescent Rolls

For the love of cooking has a recipe for Chocolate & Peanut Butter filled crescent rolls. They look delicious and I want to try them as soon as I get some crescent rolls. Will add the recipe if we love it.

Quinoa and Black Beans

I saw this on SuperHealthyKids blog. It is an Allrecipes link . I loved this recipe. I didn't like Quinoa the first few times I tried it. I could definitely eat it up like this. It is really good. INGREDIENTS 1 teaspoon vegetable oil 1 onion, chopped 3 cloves garlic, peeled and chopped 3/4 cup uncooked quinoa 1 1/2 cups vegetable broth 1 teaspoon ground cumin 1/4 teaspoon cayenne pepper salt and pepper to taste 1 cup frozen corn kernels 2 (15 ounce) cans black beans, rinsed and drained 1/2 cup chopped fresh cilantro DIRECTIONS Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned. Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes, Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Cinnamon-Apple Chex Mix Recipe

This is really good. We are making a bunch of it for the kids in primary to make and give to Dad's for Father's Day. They are also adding toppings like m&m's, choc. chips, gummy bears. This is really good by itself. It is also SUPER easy to make and fast. 5 Cups Wheat Chex Cereal (or corn, rice, mixed) 1 cup lightly salted whole almonds (or mixed nuts) 1/4 cup butter or margarine 1/3 cup packed brown sugar 2 tablespoons light corn syrup 1 teaspoon ground cinnamon (can double) 1 cup chopped dried apples 1/2 cup vanilla yogurt-covered raisins In large microwavable bowl, mix cereal and almonds. In 2-cup microwavable measuring cup or bowl, microwave butter, brown sugar, corn syrup and cinnamon uncovered on High about 2 minutes, stirring after 1 minute, until mixture is boiling; Stir. Canning with Beets

Pickled Beets : 2 Cups Sugar 2 Cups Water 2 Cups Vinegar 1 tsp. Allspice 1 Tbsp. Cinnamon 1 tsp. ground cloves 1 lemon, cut into thin slices Clean, cook and peel beets. Cut into jars with lemon slice. Boil the above mixture and add to your beets. Seal & water bath 20 min. Makes 6 pints. Beet Juice Grape Jelly : After you have cooked your beets, let the juice in the pan cool. Then boil together: 3 1/2 C. Beet Juice (skim the top you don't want any of the stuff that settled) 1/2 C. lemon juice 2 pkg. grape Kool-aid 1 pkg. pectin After boiling, add 4 C. Sugar, then let Rolling boil for 1-2 min. Seal jars & water bath 10 min. Makes 3-4 pints. This makes a really good grape jelly and sooooo easy to make.

Healthy No Bake Cookies

I am going to make this right now! 1 Cup Sugar 1/2 cup butter 3 TBL Cocoa 1/2 cup milk (or soymilk) 1/4 tsp salt Put above ingredients into saucepan. Stir until boiling. Boil for one minute Then Add: 1 tsp vanilla 3 1/2 cup oats 1/2 cup natural peanut butter Almonds, walnuts, pecans, peanuts, or any other nuts (ground) Spoon onto wax paper until cool.

Creamy Rice pudding

I am going to make this with dinner tonight. This looks good, but I have never made rice pudding before. I have tons of left over rice so we will try it. I will add the recipe if we like it. I am also going to make it with the splenda for less sugar. AllRecipes Link

Tater Tot Casserole

1 lb. ground turkey cooked, seasoned, drained (or beef) 1-2lb bag tater tots 1 can cream of mushroom 1 can evaporated milk 1 can cream of chicken 1 pkg frozen mixed veggies A hand full of cheese Brown meat & place in large cass. dish. Add Veggies & cheese. Cover with tater tots. (If you line them up you can cover the whole top better) Mix soup & milk together. Pour over top. Bake at 350 for 1 Hour.

Beans and Rice Recipe

I saw this on Super Healthy Kids blog. This was really good. I had it for lunch today for leftovers. It is very filling. I made it with brown rice just because I love it. I added some green & red peppers and seasonings. I could eat this by itself, but with meat-eaters in my family I made it with steak, corn and some fruit. The kids would have been happier without tomatoes in it. -1 cup uncooked rice -2 cups water Cook in rice cooker -1 TBL Olive oil -1 onion chopped Saute in frying pan then add -1 can black beans (drained and rinsed) -1 can diced tomatoes (undrained) -1/2 tsp oregeno -1/2 tsp garlic powder Add cooked rice to bean/ tomato mixture and heat through.

Taco Stack

8 flour tortillas 1 lb. hamburger, browned 1 can refried beans 1 can sliced olives 1/4 c. diced onions 1 c. mozzarella cheese, grated 1 c. salsa Shredded Lettuce Sour cream Place 4 torttillas on bottom of baking dish. Layer tortillas, refried beans, and hamburger, then sliced olvies, diced onions, mozzarella cheese, and salsa. Repeat layers. Top with grated cheese. Bake for 15 to 20 min. at 350. Top with shredded lettuce, sour cream, and salsa. Serve I am making this with Mexican Corn tonight.
