Pomegranate Syrup

  4 cups pomegranate juice 1/2 cup sugar (I'm trying this with stevia to be more paleo friendly) 1 tablespoon freshly squeeze lemon juice   Place the pomegranate juice, sugar and lemon juice in a 4-quart saucepan set over medium heat. Cook, stirring occasionally, until the sugar has completely dissolved. Once the sugar has dissolved, reduce the heat to medium-low and cook until the mixture has reduced to 1 1/2 cups, approximately 50 minutes. It should be the consistency of syrup. Remove from the heat and allow to cool in the saucepan for 30 minutes. Transfer to a glass jar and allow to cool completely before covering and storing in the refrigerator for up to 6 months.

Paleo Pancakes

I love these.  I usually make a batch on the weekend and put in fridge and have 2-3 small pancakes a few times during the week for breakfast.  Fast and easy to grab and go also.  Great with the pomegranate syrup I made too. 1 3/4 cups fine ground almond flour 1/2 tsp baking soda. 1/4-1/2 tsp salt 1/2 tsp cinnamon(optional) 3 large eggs   4-5 Tbls full Almond/Coconut Milk 2 Tbls honey 1 tsp vanilla   1/4 cup fruit (optional)

Paleo Breakfast Bread (Brownies) ½ cup creamy roasted almond butter 2 eggs 2 tablespoons honey 1 teaspoon vanilla extract ¼ teaspoon stevia ¼ teaspoon celtic sea salt ¼ teaspoon baking soda 1 tablespoon cinnamon 1 heaping tbsp of cocoa handful of unsweetened shredded coconut In a large bowl, with a hand blender , mix almond butter until creamy Mix in eggs, honey, vanilla and stevia Add salt, baking soda, cinnamon, cocoa, coconut Mix well with hand blender until all ingredients are combined Transfer batter into a well greased 8x8 inch Pyrex baking dish Bake at 325° for 12 to 15 minutes Serve Serves 4   Changed a litte from http://www.elanaspantry.com/paleo-breakfast-bread/   I got this one from my mom and I am going to try it this week.  She loves it and makes it often.

Cauliflower Rice

This was really good.  Tasted just like rice.  We made Hawaiian Haystacks tonight and I wanted to try this with it.  I started the Paleo diet and I love it.  I feel great and now am looking for some new recipes to add here. 1 head fresh Cauliflower Remove the leaves and hard center core of the cauliflower. Cut into florets. Wash and then allow the cauliflower to dry completely. (You want the cauliflower completely dry and you will NOT be adding any water when cooking, this helps to cut down on the boiled cauliflower taste and smell.) Once dry, fill the bowl of a food processor about half full and using the chopping blade and the pulse action, process the cauliflower until it looks like the size of grains of rice. Add the processed cauliflower to a microwave safe bowl and repeat with the remaining cauliflower. Once all the Cauliflower has been processed and added to the microwave safe bowl, cover the bowl tightly with plastic wrap or a lid. Mic...

Healthy rice Pudding

In a blender, puree two very ripe bananas with 2 cups milk. Combine the mixture with 2 cups cooked quinoa, 1/2 cup raisins, 1 tbsp of sugar, and 1 tsp of cinnamon. Simmer for 10 minutes.

Meatballs

I keep looking up the recipe for meatballs in another recipe, so I wanted this by itself for ease of looking up. I like having frozen meatballs ready to cook for those days I can't think of what to cook and it is easy to throw these in spaghetti, creamy meatballs, meatball subs, or sweet and sour meatballs. All some of my favorites. For the Meatballs: (Double this if freezing half) 1 lb lean ground beef 1/2 cup dry bread crumbs 1/4 cup oatmeal 1 small onion, diced 1 dash Worsterchire sauce 1 dash onion powder 1 dash salt 1 egg Directions: 1. Combine all meatball ingredients in a large bowl and mix thoroughly. 2. Shape into walnut-sized balls and place on a cookie sheet. 3. Cook meatballs: Bake at 400 for 20 minutes or so.(May freeze at this point by placing meatballs on a foil-lined cookie sheet and freezing. After frozen, remove from cookie sheet and place into zip-top bag.)
