Pumpkin Muffins

Got this one from candus who got it from Paleo plan website.  http://www.paleoplan.com/2009/12-03/paleo-pumpkin-muffins/ The only thing different is Candus added applesauce, so I added 1 cup. Ingredients 1½ cups almond flour 3/4 cup canned pumpkin 3 large eggs 1 cup applesauce 1 tsp baking powder 1 tsp baking soda ½ tsp ground cinnamon 1½ tsp pumpkin pie spice 1/8 tsp sea salt 1/4 cup raw honey (optional) 2 tsp almond butter 1 Tbs sliced almonds Directions Preheat oven to 350℉. Coat muffin tins with coconut oil (or use paper muffin cups and add 1/2 tsp melted coconut oil to batter). Mix all ingredients and pour evenly into tins. Bake for 25 minutes on the middle rack. Sprinkle almonds on top immediately after taking them out of the oven.

Pomegranate Syrup

  4 cups pomegranate juice 1/2 cup sugar (I'm trying this with stevia to be more paleo friendly) 1 tablespoon freshly squeeze lemon juice   Place the pomegranate juice, sugar and lemon juice in a 4-quart saucepan set over medium heat. Cook, stirring occasionally, until the sugar has completely dissolved. Once the sugar has dissolved, reduce the heat to medium-low and cook until the mixture has reduced to 1 1/2 cups, approximately 50 minutes. It should be the consistency of syrup. Remove from the heat and allow to cool in the saucepan for 30 minutes. Transfer to a glass jar and allow to cool completely before covering and storing in the refrigerator for up to 6 months.

Paleo Pancakes

I love these.  I usually make a batch on the weekend and put in fridge and have 2-3 small pancakes a few times during the week for breakfast.  Fast and easy to grab and go also.  Great with the pomegranate syrup I made too. 1 3/4 cups fine ground almond flour 1/2 tsp baking soda. 1/4-1/2 tsp salt 1/2 tsp cinnamon(optional) 3 large eggs   4-5 Tbls full Almond/Coconut Milk 2 Tbls honey 1 tsp vanilla   1/4 cup fruit (optional)    

Breakfast Burritos

1 to 1 1/2 lbs ground sausage cooked 12 eggs scrambled ( salt and pepper) 1 cup shredded cheddar 1 cup shredded pepper jack 8 burrito size tortillas TO PREP: Cook sausage, scramble eggs, shred cheeses. TO PREPARE FOR FREEZING: Fill tortillas 1/4 cup cheese (half cheddar and half pepper jack), 1/2 cup eggs, 1/4 cup sausage. Wrap into burrito and then wrap in foil. Place wrapped burritos in freezer bag. TO PREPARE AFTER FREEZING: Thaw. Bake at 350 for 10-15 minutes until cheese is melted and heated through. (Rotate halfway through baking) Could warm on grill, place wrapped burrito on grill. Rotate until warm through. Could heat in microwave, tortilla will be soft.

Sausage Balls

INGREDIENTS: 1 lb. lean sausage 2 cups grated sharp cheese (at room temperature) 3 cups biscuit mix (like Bisquick) DIRECTIONS: Mix all ingredients together Roll into 1-inch diameter balls Set on tray and freeze until firm Put desired number into freezer bags, label, and date. TO COOK: Preheat oven to 375 F. Put frozen or thawed balls on baking sheet lined with foil or parchment paper Bake thawed balls for 10-15 minutes and frozen balls for 20-25 minutes, depending on your oven. We eat these delicious sausage balls for breakfast.

Pumpkin Waffles

I am going to make pumpkin waffles for breakfast tomorrow. I saw this recipe on Super Healthy Kids blog 1 1/2 cup whole wheat flour 3 tsp baking powder 1/2 tsp baking soda 1 TBL pumpkin pie spice (or 1 tsp each of cinnamon, ginger, and nutmeg) 1/8 tsp salt 2 eggs 1/4 cup brown sugar 1 cup pumpkin puree 1 2/3 cup milk 1/4 cup canola oil

Orange French Toast

Uncle Tracey suggested this recipe. One morning while he was visiting he made breakfast for his mother and this is what he made. Pretty nice. We tried it the next day and we liked it. All you do is trade the milk you use for orange juice. 4 eggs 1/3 C. orange juice 1/2 tsp. cinnaman 6-8 slices of bread Make like French toast on a griddle.

Banana Oat Pancakes

My friend Jodi told me she puts Oatmeal and protein powder in her pancakes to make it healthy for her kids. I was looking for a recipe like it and found this one: (I might throw in a scoop of protein powder also) Ingredients 3 bananas 1/2 c milk 1/2 t vanilla 1/2 c ground oats 3/4 c oats 1/2 c whole wheat flour 1/4 t salt 2 t baking powder 2 egg whites, whipped to soft peaks sliced banana for garnish Directions Blend bananas and milk together in blender.Transfer to bowl and stir in vanilla, oats, flour, baking powder and salt. Fold in egg whites. Spray nonstick griddle with pan spray and heat over medium heat. Add in a few spoonfuls of batter, leaving room for when they expand.Cook on each side until lightly browned. To serve, top with banana slices and drizzle with pomegranate syrup. SYRUP Ingredients 1 c pomegranate juice 2 T honey Directions In non reactive sauce pot, reduce until thickened.

Egg Puff Casserole

This looks like another version of German Pancakes. I am trying this on the weekend. 1/4 cup butter 12 eggs 1/2 cup all-purpose flour 1 tsp. baking powder 2 cups cottage cheese 4 cups shredded Monterey Jack Cheese Preheat oven to 350. Place the butter in a 9X13 baking dish and put dish in oven to melt. In a blender add eggs, flour and baking powder. Cover and blend until smooth, about 1 min. Pour into a large bowl and fold in the cottage cheese and Monterey Jack cheese. Pour over the melted butter in the dish. Bake until firm about 30 minutes. Adding diced ham or cooked crumbled sausage to this recipe makes it even more delicious. This was really good and not at all like german pancakes. I made it with sausage and it was good with maple syrup poured over the top. A lot cheesy, so not too healthy, but really Good.

Whole Wheat Pancakes

This recipe is from The America's Test Kitchen Family Cookbook (which I just ordered) I made them this morning and they were really good. I love whole wheat blender pancakes, but the kids complain about crunchy things. I like how this recipe makes the pancakes fluffy, not heavy. It was also very quick to mix these few ingredients. I already had some whole wheat ground and added the rest. I did 1/2 recipe for two kids and me. It was the perfect amount. If you have a great mother who mailed you Montana-Wild Huckleberry Jam-Eat it with that or just use syrup. - 2 cups whole wheat flour - 2 TBSP. sugar - 2 tsp. baking powder - 1/2 tsp. baking soda - 1/2 tsp. salt - 1 large egg - 3 TBSP. butter melted - 2 C buttermilk (or 2 C regular milk with 1 T lemon juice added, let sit for a few minutes) Whisk together dry ingredients. Awesome Banana Muffins

I made these this morning and they were a hit! 4 Large bananas, mashed 1/2 cup white sugar (original recipe calls for 1 cup, but I don’t like them too sweet) 1 slightly beaten egg 1/3 cup melted margarine or butter 1 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon salt 1 1/2 cups flour Mix the mashed banana, sugar, egg and margarine together. Set aside. In a separate bowl, mix together baking soda, baking powder, salt and flour. Mix wet and dry ingredients all together, being careful not to over-stir! Pour into greased muffin tins, and bake in 350 degrees oven for approximately 20 minutes. Enjoy! *These are much more flavourful the next day, and they freeze very nicely too! *Also, if you like walnuts, you can throw a handful of those in there as well for some added flavour and texture, or try adding chocolate chips, or better yet, BOTH! Crockpot Oatmeal

We are not an oatmeal family. I sooo wish I started giving my kids oatmeal while they were babies so they would love it now. We are more of a pancake and cereal kind of family. Justin loved this and ate most of the peaches. The girls not so much. I really like it after I added some more Oatmeal and cooked a little longer. I have always wanted to try a breakfast crockpot recipe and see how it turned out in the morning. I would do this one again. Ingredients: 3 1/2 cups Oatmeal-If you want more liquid than oatmeal stick with 2 cups. 8 cups water 1/2 cup brown sugar 1 tsp. vanilla 1 tsp. cinnamon 2 cups peaches Spray your crockpot dish with pam. Pour all ingredients except the peaches. Stir and cook on low for 8 hours. I slept in and cooked it for 10 hours and it was still ok. Also the recipe called for 2 cups oatmeal, but I thought it should be way more thicker so I changed it to 3 1/2. Also, changed the peaches from 1 cup to 2 cups. Spinach Berry Smoothie

I love smoothies! So easy to make and you can make them out of any fruit mixture you have on hand or like. I posted an Ultimate Breakfast Smoothie recipe before. Follow the main, frozen, fresh fruit, yogurt mixture and it pretty much turns out great every time. This would be good with strawberries and bananas also. It might turn out more green from the spinach. While checking out at Costco yesterday the lady there noticed my spinach and asked if I make smoothies. Yep, I do. She suggested making them with spinach. Hmmm...never would have done it before. I tried it last night and love it. Ingredients: About 3/4 cup of frozen berries 3/4 cup vanilla yogurt (I like the Dannon Light & Fit-80 cal. for 1 cup) Two big hand fulls of Spinach-(See the 2 1/2 pound bag I got from Costco) 1/4 cup juice 6-7 Strawberries I had some leftover canned pears-throw in 3 or 4 slices 3 Tbsp. ground flax seed Throw it all in the blender except the flax seed. Crepes

3 eggs 1 1/3 C. Milk 3 Tbsp. Melted Butter 1 C. Flour 1/2 tsp. salt Mix together ingredients. Heat a small pan with pam and pour about 1/3 c. mix. Take pan and turn around until all edges of pan are covered with mix. Heat about 1 min. then flip another 30 sec. Remove. These are good with just about any filling. I filled them with crumbled sausage and scrambled egg mixture. Randy thinks they are only good with pie fruit filling and topped with whip cream. I agree! Who doesn't like dessert for breakfast?

Whole Grain Waffles

Original recipe from Allrecipes.com I made these for dinner tonight. Can I just say, Holy Toledo they were good! I only changed it a little because of one of the comments. Oh, and Randy totally hates Breakfast for dinner. He might just have to re-heat leftovers. INGREDIENTS 2 eggs, beaten 1 3/4 cups skim milk 1/2 cup unsweetened applesauce 1 teaspoon vanilla extract 1 cup whole wheat pastry flour 1/2 cup flax seed meal 1/4 cup wheat germ 1/4 cup all-purpose flour 4 teaspoons baking powder 1 tablespoon splenda sugar + 1 tsp. brown sugar 1/4 teaspoon salt DIRECTIONS In a large bowl, whisk together the eggs, milk, oil, applesauce, and vanilla. Beat in whole wheat pastry flour, flax seed meal, wheat germ, all-purpose flour, baking powder, sugar, and salt until batter is smooth. Preheat a waffle iron, and coat with cooking spray. Pour batter into waffle iron in batches, and cook until crisp and golden brown. This should be 193 calories per serving (2 waffles).

Breakfast Burritos

I made these last weekend and they turned out really good. 1/2 pound of sausage Hashbrowns (I use O'brien cubes with onion and peppers in it) Chopped onion & pepper if using different hashbrowns. (I will cut up extra onion and pepper and throw together in a freezer zip lock bag. Use any amount when needed for saute) 4-5 eggs, whipped Shredded cheese (1/2 lb) Tortillas Salsa In a skillet, brown sausage until almost done, add hashbrowns with onion & peppers. I added about 2 tsp. Olive oil at this point to keep the hashbrowns from sticking. Finish cooking until hashbrowns are mostly soft. Add whipped eggs and cook until done. Top with cheese and cook another minute until melted. Mix all together and serve in hot tortillas with salsa.

German Pancakes

4 tbsp. butter 7 eggs 1 C. flour 1 C. milk 1/4 tsp. salt Spray 9X13 pan with cooking spray. Add butter and put in oven at 450 degrees. While butter is melting mix eggs, flour, milk, and salt with hand mixer or use blender. Pour in pan after butter is melted. Bake 17-20 min or until sides are tall and fluffy and just brown. Serve with syrup and powdered sugar (optional), or peanut butter, applesauce, strawberry jam, cool whip, anything that you have on hand. Variations: Puffed-up pancakes or Apple Puffed Pancake 6 eggs 1 ½ cups milk 1 cup flour 3 Tbls sugar 1 tsp vanilla ½ tsp salt ½ tsp cinnamon 1 cube butter 2 apples peeled & sliced 3 Tbls brown sugar Preheat oven to 425. In a blender or large bowl, mix eggs, milk, flour, sugar, vanilla, salt and cinnamon until well blended. Melt butter in a 9×13” pan in oven, add apple slices to baking dish and return to oven until butter sizzles, do not let it brown. Remove dish from oven and immediately pour batter over apples. Granola

This is Laurel Mills recipe and I think it is great. I added flaxseed ground up about 1/2 cup, and craisins. 7 c. rolled oats 1 c. wheat germ 1 c. wheat or oat bran 1/2 c. brown sugar 1/2 c. vegetable oil (I used olive oil and it turned out just fine) 1.2 c. honey 1/2 c. water 1 T. vanilla 1 t. each cinnamon, nutmeg, salt 1 c. each sliced almonds, coconut Preheat oven to 275. Stir up oats, wheat germ and bran. Mix sugar, oil, honey, water, vanilla and spices and pour over. Mix well. Spread onto 2 cookie sheets and bake 45 min. stirring every 15 min. Add almonds and coconut and bake 15 min. more. Let cool. Makes about 13 c. (gallon ziploc) Tips: You can food-process the rolled oats a little, and the almonds and coconut too. Texture turns out like grape nuts. Eat with milk, yogurt or even on your ice cream. If you want it more clumpy for the last baking, with the nuts and coconut, add 2-3 T. honey mixed with the same amount of water. Gives it a nice shiny look. You could also add other t...

Homemade Bisquick

10 cups flour 1 Tblsp cream of tarter 1/4 cup sugar just under 1/2 cup baking powder 1 1/2 Tblsp salt 2 cups shortening Mix together with mix master or I just used a blender and it fits pretty good in one of those 5 gallon ice cream buckets. To make pancakes add 1 cup milk and 1 egg with enough mix to make pancakes as thick as you like. (about 1 cup or less). For biscuits, add 1 cup milk to 3 cups mix. Roll into ball and smash onto cookie sheets and bake. About 350 for 8 min. Check for brown bottoms and not doughy. Tip: To make this healthier you could leave out the sugar and use half white, half whole wheat. I have also left out the cream of tarter and not noticed a difference. I haven't ever left out the sugar so that is up to you, but I have seen healthy recipes similar with no sugar.
