Crockpot Oatmeal

We are not an oatmeal family. I sooo wish I started giving my kids oatmeal while they were babies so they would love it now. We are more of a pancake and cereal kind of family. Justin loved this and ate most of the peaches. The girls not so much. I really like it after I added some more Oatmeal and cooked a little longer. I have always wanted to try a breakfast crockpot recipe and see how it turned out in the morning. I would do this one again. Ingredients: 3 1/2 cups Oatmeal-If you want more liquid than oatmeal stick with 2 cups. 8 cups water 1/2 cup brown sugar 1 tsp. vanilla 1 tsp. cinnamon 2 cups peaches Spray your crockpot dish with pam. Pour all ingredients except the peaches. Stir and cook on low for 8 hours. I slept in and cooked it for 10 hours and it was still ok. Also the recipe called for 2 cups oatmeal, but I thought it should be way more thicker so I changed it to 3 1/2. Also, changed the peaches from 1 cup to 2 cups. Quinoa Tips

How have I added Quinoa to my diet? I tried it plain, with a little salt & pepper. It was ok, not great. So I have been looking around and asking other people. You can grind your quinoa in your trusty coffee grinder and add it to breads, oatmeal, muffins or pretty much anything you are baking. I tried it in wheat bread the other day (added about 2/3 cup to 3 loaves of bread) and the people I tested it on, Randy and his mom, said it tasted good and couldn't taste the added ingredient. I could taste the quinoa in it because I have had it before, but it wasn't a strong taste and the bread was still great. Will do that again.

Making your own Gravy, Sauces, & Cream Soups

This is a great way to save money and make your own: Basic Ingredients and Directions: 1/4 cup margarine 1/4 cup flour 1 3/4 to 2 cups liquid For most recipes, first melt the margarine over medium heat, then whisk in the flour and cook for 2 minutes. Some variations may use something other than margarine. Variations BEEF GRAVY: Add 2 cups beef broth as the liquid. Bring to boil over medium heat, stirring frequently. Add seasonings (about 1 t. each, or to taste) and boil until desired consistency. Some seasoning options: thyme, pepper, Italian seasoning, onion powder. (If using gravy on ground beef, use grease from browning the beef in place of the margarine.) CHICKEN GRAVY: Add 2 cups chicken broth as the liquid. Bring to boil over medium heat, stirring frequently. Add seasonings (about 1 t. each, or to taste) and boil until desired consistency. Wet Burrito

I have never heard of a Wet Burrito before. If you google it you will find that it is made a ton of different ways and very popular. I found this recipe and decided to give it a try tonight. This was super easy and quick. I made them with both the meat and refried bean mixture. I also topped them with fat free sour cream and home-made salsa. They were really good. Randy had three and said he wanted to stop after two. This is an extremely versatile recipe that’s so easy to make ahead and then refrigerate until you’re ready to throw it in the oven. The basic directions are as follows: fill flour tortillas with a beef or bean (or combination) mixture roll the tortillas and place seam side down in a baking dish cover with enchilada sauce until the burritos are completely covered sprinkle liberally with shredded cheese (Cheddar, Colby Jack, etc.) I only had about 1/2 cup in the house so that is all I used. Honey Baked Chicken

4-6 Chicken Breasts (cut into bite sized pieces) 1 tbsp. butter 1/2 C. Honey 1/4 C. Prepared Mustard 1 tsp. curry powder dried fruit (any kind-apricot, raisins, craisins) Put chicken in 9X13 dish. Mix sauce and pour over chicken. Bake until Chicken is done. 425 for 45 minutes. Great served over rice.

Garlic Lime Chicken

-6 to 8 chicken breasts -3 garlic cloves, crushed -2 Tbsp. fresh, chopped basil or 1-2 tsp. dried sweet basil -1/4 lime juice, fresh or Real Lime -2 Tbsp. olive oil Combine all ingrediants except chicken. Add the chicken and toss. Refridgerate, covered and let marinade for 2 hours, shaking or tossing chicken ocassionally during marinading time. Grill on medium-high heat until cooked through and juices run clear. This may also be baked at 425*F, covered for 50 - 60 minutes.

Spinach Berry Smoothie

I love smoothies! So easy to make and you can make them out of any fruit mixture you have on hand or like. I posted an Ultimate Breakfast Smoothie recipe before. Follow the main, frozen, fresh fruit, yogurt mixture and it pretty much turns out great every time. This would be good with strawberries and bananas also. It might turn out more green from the spinach. While checking out at Costco yesterday the lady there noticed my spinach and asked if I make smoothies. Yep, I do. She suggested making them with spinach. Hmmm...never would have done it before. I tried it last night and love it. Ingredients: About 3/4 cup of frozen berries 3/4 cup vanilla yogurt (I like the Dannon Light & Fit-80 cal. for 1 cup) Two big hand fulls of Spinach-(See the 2 1/2 pound bag I got from Costco) 1/4 cup juice 6-7 Strawberries I had some leftover canned pears-throw in 3 or 4 slices 3 Tbsp. ground flax seed Throw it all in the blender except the flax seed. Canning Day!

Yesterday, I spent the day, first picking the garden, then canning. Since I got back from Vacation, I have been getting a ton of tomatoes. So I decided to can them yesterday. First I started the Zucchini Relish . While that was soaking I did the Salsa (we love this salsa recipe). Then since today is Great Grandma Reeve's Birthday I made a Zucchini Cake for her. This is also a favorite. I was super sore last night. My back can't take that much standing and working without telling me about it all night. But look at all the canned goods I have to reap for my reward. Love It! I have plans to do some Tomato Soup, more salsa, Peaches, and diced tomatoes as I get more from my garden. I did some diced tomatoes last year and used them alot. I like not having to buy that. Anybody have a favorite canning recipe they would like to share? I Love to try new ones.
