Egg Puff Casserole
This looks like another version of German Pancakes. I am trying this on the weekend.
1/4 cup butter
12 eggs
1/2 cup all-purpose flour
1 tsp. baking powder
2 cups cottage cheese
4 cups shredded Monterey Jack Cheese
Preheat oven to 350. Place the butter in a 9X13 baking dish and put dish in oven to melt. In a blender add eggs, flour and baking powder. Cover and blend until smooth, about 1 min. Pour into a large bowl and fold in the cottage cheese and Monterey Jack cheese. Pour over the melted butter in the dish. Bake until firm about 30 minutes.
Adding diced ham or cooked crumbled sausage to this recipe makes it even more delicious.
This was really good and not at all like german pancakes. I made it with sausage and it was good with maple syrup poured over the top. A lot cheesy, so not too healthy, but really Good.
