Sweet Pork
We had a RS night a while back all about food. This lady brought this recipe and we got to try it. It was really good. I am going to make it someday.
Ingredients:
2 pound pork
2 cups apple juice
dash garlic salt
1/4 c. water
1 can sliced green chilies
1 15 oz. can green enchilada sauce
1/2 c. brown sugar
Directions:
Put pork, 1/2-1 cup apple juice, water, and garlic salt in crock pot on high for about 3-4 hours or low for 6-8 (until it shreds easily, but don't let it get too dry). Remove pork from crock pot and drain any liquid left in the pot. Shred pork.
In a food processor or blender, blend 1/2-1 cup apple juice, chilies, enchilada sauce and brown sugar. If it looks too thick, add more apple juice little by little.
Put shredded pork and sauce in crockpot and cook on low for 2 hours.
Roll in a big tortilla with cilantro-lime rice, black beans, cheese and lettuce.
