Canning with Beets


Pickled Beets:
2 Cups Sugar
2 Cups Water
2 Cups Vinegar
1 tsp. Allspice
1 Tbsp. Cinnamon
1 tsp. ground cloves
1 lemon, cut into thin slices

Clean, cook and peel beets. Cut into jars with lemon slice. Boil the above mixture and add to your beets. Seal & water bath 20 min. Makes 6 pints.

Beet Juice Grape Jelly:
After you have cooked your beets, let the juice in the pan cool.

Then boil together:
3 1/2 C. Beet Juice (skim the top you don't want any of the stuff that settled)
1/2 C. lemon juice
2 pkg. grape Kool-aid
1 pkg. pectin

After boiling, add 4 C. Sugar, then let Rolling boil for 1-2 min.

Seal jars & water bath 10 min.

Makes 3-4 pints.

This makes a really good grape jelly and sooooo easy to make.

No way! You are definitely the coolest! I have heard of zucchini strawberry jam done with koolaid, but who thought of beets? And totally cheap, too.

I'm made those canned beats before. They are pretty good. They call them Christmas beats out here and give them out as Christmas presents.
