Best Oatmeal Raisin Cookies

4 eggs, beaten
1 cup raisins
1 teaspoon vanilla extract
1 cup butter
1 cup packed brown sugar
1 cup white sugar
2 1/2 cups all-purpose flour
2 teaspoon ground cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
2 cups rolled oats (quick)
1 cup chopped pecans


Combine eggs, vanilla and raisins in a small bowl; cover and let stand for 1 hour.
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, cream the butter, brown sugar, and white sugar together. Sift together the flour, cinnamon, and baking soda, baking powder; stir into the creamed mixture. Then stir in the raisin mixture, rolled oats, and nuts. Refrigerate for an hour if you have the time.
Drop by teaspoonfuls onto an unprepared cookie sheet. (Use Parchment paper on your cookie sheets) Bake for 10 minutes, or until lightly browned.

Tips: If you don't like raisins try white choc. chips or choc. chips instead or coconut.
Also, if you don't like nuts add 1/2 c. more flour to the recipe.
