Fresh Peach Pie

If you haven't noticed I usually only put recipes on here that I LOVE! Sometimes they are just great tasting and others are just easy to make and are pretty good. This is one that I LOVE. Pie Crust: 3 c. flour 1 c. Crisco 1 tsp. baking powder 1 tsp. salt Mix together with your hands until it is mixed evenly. Take 1/2 c. of hot tap water and put in 1 tbsp. of vinegar. Mix this with the other stuff and roll out. Makes 4 crusts, or 2 pies if you have a top crust and bottom. Peach Pie: 3 cups sliced peaches 1 cup sugar 1-3 oz. pkg. peach jell-o 1/3 c. cold water 2 tbsp. cornstarch 1 cup 7-up Heat 7-up & sugar to dissolve sugar. Mix cornstarch and water and add to 7-up mixture. Cook until slightly thick. Add dry Jell-o, chill, mix with fruit or berries. Pour into baked pie shell. Top with ice cream or cool whip. *I usually double the recipe and it makes about 3 pies. Homemade fresh Salsa (very yummy!)

8 Roma Tomatoes (or use regular, but the salsa won't be as hot) I actually put about 20 reg. tomatoes from the garden. 1 jalapeno Pepper 2 Serrano Chili Peppers 1 med. onion (or 1/2 if you don't like that much onion) Chop all the above ingredients. Then Add: 1 sm. can green chilies 1/4 tsp. cumin 1/4 tsp. cocoa 1/4 tsp. chili powder 1 tsp. dried cilantro (fresh will also work) 1 tsp. crushed red pepper 1/2 tsp. Jan's crazy salt mix (get this at Albertson's) 1/2 tsp. salt 1/2 tsp. lemon juice Will last up to one week in the fridge. Sooooo Yummmy!

Sweet & Sour

I made this yesterday with some left over pork. It is really simple and only took about 20 minutes to prepare. Cut and cook boneless chicken or pork. If using meatballs, roll raw hamburger in cornstarch and cook in 1/4 in. of oil. Cut up green peppers, onions and mushrooms, carrots, celery, cauliflower, bean sprouts, water chestnuts (anything you have handy). Saute' vegetables. Combine 2 tablespoons corn starch with 1/2 cup sugar. Add 1/2 cup pineapple juice and 1/2 cup vinegar. (I just used a large can of pineapples and the juice from that, then added the pineapples with the veggies). Cook until boiling, add a pinch of ginger if you have it. Combine with vegetables and meat. Serve over rice.

Tater Tot Casserole

1 pkg. tater tots, or 1 pkg shredded hash browns 2 cans cream of mushroom soup 1 lb. ground beef a little milk grated cheese Fry ground beef with onion, salt and pepper. Drain fat. cover 9X13 in. pan with tater tots. Put ground beef over tater tots. Pour cream of mushroom soup, mixed with some milk over the meat. Sprinkle cheese on top. Add a few tots for topping (crumbled). Cook 35-40 min. at 350.

Chicken Divine

4 chicken breasts 1 cup milk Swiss cheese 1/2 package stove top dressing 1 can cream of mushroom soup Place chicken in buttered casserole. Place slices of cheese over chicken. Combine soup and milk. Pour over chicken. Pour dry stove top dressing on top. Bake 1 hour at 350 degrees uncovered.

South of the border wraps

1 can kidney beans, drained 1/4 c. salsa 1 can whole kernal corn, drained May add mean, onion, etc. 1/2 cup grated cheddar cheese flour tortillas Mix everything but tortillas and cheese. Spread on tortilla, sprikle with cheese. Roll up and microwave until hot about 1 min.

Navajo Tacos

For the Shell: Make this mix and store in a container with lid: (I use the ice cream buckets) 7 cups flour 8 tsp. baking powder 1/4 cup shortening 4 tblsp. sugar 4 tsp. salt Mix together until shortening is blended and you see no lumps. Now take 2 cups of the above mix and 2/3 cup of water, mix well with fork. Dough should not be sticky. Let rest 5 or 10 min. Take small amount of dough and roll out on bread board which you have rubbed a layer of cooking oil on. Cook in hot grease, turn and cook on other side. Top with: 1 lb. hamburger cooked and drained, with 1 can chili and mash it (or 1 can refried beans) Cheese, tomato, lettuce, salsa.
