cafe rio recipes
For all those Cafe Rio fans here are some really good recipes I got from girls camp this year. Yes, we ate really well at girls camp.
I was thinking of making this for dinner on Sunday this week.
Dressing
1 buttermilk ranch dressing packet (made as per recipe)
2 tomatillos (tomato like vegetable with a husk around them)
1/2 bunch of cilantro
1 clove garlic
juice of 1 lime
1 jalepeno (Use the seeds too if you like it spicy. You could substitue a few drops of green tobasco for the jalepeno.)
Use a food processor to blend all the ingredients well. Refrigerate.
Cafe Rio Rice
3 c. water
4 tsp. chicken bouillon
4 tsp. garlic-minced
1/2 bunch cilantro
1 can green chiles-or equivalent fresh
3/4 tsp. salt
1 T. butter
1/2 onion
3 c. rice
Blend cilantro, green chiles and onion together in food processor. Bring water to a boil and add all ingredients, simmer covered 30 minutes.
Chicken
1 small bottle kraft zesty italian dressing
1 T. chili powder
1 T. cumin
3 cloves garlic-mined
5 lbs. chicken breast
Cook all together in a crock pot for 4 hours, shred meat and cook 1 additional hour.
****So we ate the chicken at camp. We heated flour tortillas on both sides until slightly brown. Then topped with romaine lettuce torn pieces, the rice above, meat, cheese, olives, dressing, black and pinto beans, fresh salsa. Then ate it like a salad and occationally tore the tortilla in pieces.*****Below are more Cafe Rio Recipes.
Sweet Pork
2 1/2 pounds pork
1/3 cup water
1/8 tsp garlic salt
1/8 tsp salt
1/8 tsp pepper
1/2 cup green chili sauce
1/2 cup brown sugar
Put pork, 1/3 cup water, garlic salt, salt, and pepper, in the crock pot.
Cover and cook on high for 4 hours.
Drain, shred pork, stir in 1/2 cup green chili sauce and 1/2 cup brown sugar.
Barbacoa (crock pot)
For the Beef:
3 pound chuck or rump roast
1 onion, chopped
1/4 cup apple cider vinegar
6 garlic cloves, chopped
2 Tablespoons whole black pepper
2 bay leaves
For the Sauce:
1 large (1 lb.) can tomato sauce
1/2 pound green chiles, roasted, skinned and sliced (or 1 (8oz) can)
1/4 cup chili powder
1/4 cup jalepeno juice
Combine the ingredients for the beef in a crock pot:
Cook for minimum of 6 hours on low, or until meat falls apart. Add water as necessary to keep meat covered in liquid.
Remove cooked meat from crock pot; set aside to cool meat (plan on an hour or so for the meat to cool and to shred the meat)
Remove broth from crockpot. Strain out and discard solid ingredients; set aside the broth.
Finely shred the cooled beef. Add shredded meat back to crockpot along with the ingredients for the sauce. Add enough broth to keep moist.
Cover the crock pot and cook on low for two more hours.
To Serve:
Serve with flour tortillas and roll them like burritos or tacos.
